Last week Sam & I made pesto together. Here's the recipe I came up with after looking through countless other recipes.
Pesto
3 cups packed fresh Basil leaves
3 Tbs. minced Garlic
3/4 cup grated Parmesan
1/2 cup Olive Oil
1/4 cup toasted Pine Nuts
1/4 tsp. Kosher Salt
1 squirt Lemon Juice
Blend until smooth in food processor. Our favorite way to enjoy pesto is with chicken, stir-fried veggies & pasta.

backyard farm party
this past weekend we went to a party at my cousin's house. my cousin anna, her husband steve and their adorable son robin started their own csa this summer called rains & sun backyard farm. i immediately signed up, because i thought it would be great to get fresh organic produce all summer long and into the fall, and i also love to support small business ventures! i'm so glad we signed up. it's been a great addition to our meals this summer. i signed up for a half share, so i get my produce every other week. i pick the produce up at my aunt & uncle's house, so i get an added bonus of getting to visit with aunt rita & robin (who hangs out at her house on mondays). i have been very pleased with the amount of food we've gotten each time, and they have quite a variety. my favorites have been the sugar snap peas, the salad mixes and the edamame. they have more veggies than fruits, but i'm ok with that, because our family needs to be eating more veggies! the best thing for me about being a part of a csa is that i'm receiving items i probably wouldn't buy, so i have been challenged to try new dishes, find new recipes and experiment. the other great thing is that the kids are trying new veggies. three of my four children are very picky eaters, so you can imagine my excitement when they all ate okra for dinner one night! we talk alot about farming, healthy foods, and trying new things. it's been a great learning & culinary experience for all of us.
anyway, back to the party...we went to their home on saturday and spent the evening running amongst the rows of the garden, playing croquet, catching up with family & friends, playing ball with grandma, and of course there was a delicious spread of food to eat!

lemon basil chicken
i feel like i've started so many posts this summer with the sentence: "last week in our csa we got...". joining a csa and getting farm fresh organic produce each week has been an awesome culinary experience for me. i just keep trying new recipes! last week we got lemon basil, and i had never cooked anything with lemon basil before. i decided to try some chicken. i checked out a few recipes, combined a couple of my favorites and this is what i came up with:
marinade: 3 Tbs. fresh lemon basil chopped (or regular basil if you don't have lemon on hand), 1/4 cup lemon juice, 1 Tbs. olive oil and 3-4 heaping spoonfuls of minced garlic.
enjoy - i loved mine with noodles & parmesan!

- four boneless, skinless chicken breasts, washed and trimmed
marinade: 3 Tbs. fresh lemon basil chopped (or regular basil if you don't have lemon on hand), 1/4 cup lemon juice, 1 Tbs. olive oil and 3-4 heaping spoonfuls of minced garlic.
place chicken between wax paper and pound with a mallet to flatten a bit.
combine marinade ingredients and mix well.
put chicken & marinade in a ziploc bag and refrigerate for one hour.
place chicken on hot pan and cook for 10-12 minutes until done. turn the chicken often.enjoy - i loved mine with noodles & parmesan!
oven fried okra
last week in our CSA from Rains & Sun Backyard Farm we got a bunch of okra. since i'm on a healthy eating kick, i felt like pan fried okra wouldn't be the best option. i did a little research, and came up with a great way to make the okra taste yummy like fried okra, but without all the (messy & unhealthy) frying. if you love okra, you should try this method. using jiff corn bread mix makes it a bit sweet, and all four of my kids ate it! score one for mama!
by the way, i think okra is a pretty veggie...it looks like little flowers when you chop it up!

Coca Cola Lends a Hand in our Community
On Friday the boys and I were invited to a special event at the International Friendship Park in Cincinnati. We were lucky enough to be on hand when Coca Cola presented Cincinnati Parks with a check for $10,000 to help build a new Bike & Mobility Center. The Bike & Mobility Center will be located at a fabulous new park on the shores of the Ohio River, the Smale Riverfront Park. Construction is underway on Smale Riverfront Park and it is set to open in Spring of 2012 and will link to the existing parks on the banks of the Ohio. If you read Family Friendly Cincinnati, you know that I love to explore all of our area parks with my children. I'm giddy about this new park, I can't wait to check it out next year with the munchkins! And we can take a bike ride all along the Ohio River, stopping to play at the various parks.
Friday's event was more than just a big check being handed over. There were state & local dignitaries, spokespersons from Coca Cola and Cincinnati Parks, and even a professional BMX rider. They all spoke of the importance of parks, the need for more people to get outside & live healthy lives, and the impact the park could have on our local economy if it brings more people downtown. The speeches were heartfelt & everyone seems really excited about the new park & bike center. After the speeches there was an bike ride through the park, which Sam loved (even though he trailed behind everyone else). And Coca Cola bought bikes just for this event, and after the event they donated the bikes to our local Boys & Girls Club. How cool is that?! After the bike ride was my favorite part - free lunch, and Sam's favorite part - a BMX demonstration.
When we left he said he couldn't wait to get home and try some tricks on his bike. I'm a little nervous about this. Thanks to Coca Cola for helping our community! And I'm so anxious to see this new park after being at this event. tomato-basil bagel sandwich
i fell in love with my lunch yesterday and wanted to share it with you. it's a very simple & healthy sandwich, perfect for breakfast or lunch, or even a mid-day snack. i might be re-inventing the wheel here, perhaps this is already a popular sandwich...i wouldn't know, because i've just recently begun to love and appreciate tomatoes. i used to only like them in salsa, sauce or ketchup form, but they have grown on me, and now i enjoy them immensely.

what you need: bagel thins, reduced fat cream cheese, a fresh tomato (sliced), basil (shredded) & garlic powder
how to: toast the bagel, spread cream cheese on both sides (i only use a light layer of cream cheese), sprinkl just a little bit of garlic powder and a healthy dose of basil onto the bottom half. top with sliced tomatoes & the top of the bagel. cut in half and enjoy.

when looking through old photos i came across this bunch of snapshots taken of me when i was a toddler. i was spending the day at the farm with my beloved "bop bop". i spent many a saturday with bop bop when i was young. we spent time at the farm, "worked" at his office (i was an expert pencil sharpener & garbage can emptyer), we had lunch at fancy restaurants, and visited local feed & seed stores. i treasure the memories of my bop bop, and i still miss him very much. i often wistfully think how great it would have been for him to meet his great-grandchildren.
i did a little touch-up on these photos at picnik.com, which brightened the dull colors. you can't see my bop bop very well in the one picture he's in, but just looking at the pictures helps me reminisce about days on the farm with him when i was young.

the end of summer ~ 2011
summer has come to an end for our family. it's still hot outside, but the kids are back in school, so our adventuring days are going to be few and far between now. i wrote about our summer bucket list in june, and i am happy to say that even though we didn't get to do everything on our list, we still had quite a bit of adventuring this summer! we went on hikes, had two great vacations, went swimming, explored local attractions, and much more. the one thing we didn't do much of this summer was clean...so i'll be spending the next few weeks trying to get my house back in order. how did you do on your summer bucket list? did you have a fun summer?

first day of school 2011
ella (3rd) and max (1st) headed back to school today. they were so eager to go, and i'm hoping that this enthusiasm lasts all year long. max wore his backpack for 45 minutes before we left today, he even ate breakfast standing up because he couldn't sit with it on. ella was quietly excited...quick to hop out of bed, brush teeth, get dressed and fix her hair. they both have great teachers this year, and i'm looking forward to watching them grow and learn.

vacation cooking
this post should have been titled "a whole bunch of tasty recipes". i can't do a menu planning monday post this week, because i was on vaca last week in pawleys island, south carolina. instead i want to share a few delicious recipes (and some yummy pictures) with you. we feasted like kings all week long. we had so many people contributing so many epicurean delights. and we even had a dessert contest exhibition.

the first night we had taylor's pizzas...they were all so damn good. this pizza was shrimptastic. i'm not sure how he made it, but i fell in love with it.
aunt sandra's famous summer fruit pie:
Summer Fruit Pie
1 Baked Pie Crust - Pillsbury Best
3/4 cup sugar
3 tablespoons corn starch
1-1/2 cups of water
1 small package of red Jello-O (raspberry best)
1-cup raspberries
1-cup strawberries, sliced
1-cup blueberries
Put water, sugar and cornstarch together in a saucepan and bring to a boil over medium heat stirring so cornstarch does not get lumpy. When it comes to a boil, boil together for one minute, stirring constantly, add jello and remove from heat and stir completely to dissolve. Allow to cool to room temperature. Add fruit to mixture (I don a surgical glove to mix gently adding raspberries last and maybe save some of the best to roll into mix on top).
Note: blackberries can be substituted for raspberries if unavailable. Other fruits may be used seasonally.Pillsbury piecrust in box, not in pie shape, can be found in the dairy case.
veronica's better than sex cake...it was worth every single calorie. sinfully delicious.
mama's fudge. which is usually only a holiday dessert, but we were gifted with a rare mid-year treat. it's always a favorite. and the recipe is a closely guarded family secret, so you'll just have to dream about it's deliciousness.
aunt mary's eclair cake. it looks so simple in this picture, but really it was a delicious, layered masterpiece that took her hours to create.
i asked laura to bring fruit for dinner one night, and she came up with this awesome twist...not your typical fruit salad, not even close. this winter wheat berry salad was unlike anything i've had before and i loved it. (and for the record, there was fruit in there!)
Tomato Pie
Source: Cook's Country
Serves 8
2-9 inch pie dough rounds (I use Pillsbury roll outs)
2 lbs beefsteak tomatoes (abt. 4 large) cored and cut into 3/4 inch slices
1/2 teas. salt
1/3 cup mayo
4 teas. cornstarch
1-1/2 shredded sharp cheddar cheese
4 scallions, sliced thin
Roll dough and transfer to pie plate, letting excess hang over edge. Cover with plastic and refrigerate 30 minutes. Roll 2nd round into 12 inch circle and refrigerate for 30 minutes. I put it into towel and roll.
Arrange tomatoes on several paper towels-lined baking sheet and sprinkle with salt. Let drain 30 mins, then press tomatoes with additional paper towels until very dry.
Adjust over rack to lowest position, place empty rimmed baking sheet on rack, and heat oven to 450 degrees. Mix mayo, cornstarch and 1 cup cheese in bowl till combined. Sprinkle remaining cheese over bottom of dough-lined pie plate.
Arrange third of tomatoes over cheese. Spread half of mayo mixture over tomatoes and sprinkle with half of scallions. Layer with another third of tomatoes, remaining mayo, mixture and remaining scallions, then top with remaining tomatoes.
Arrange top crust on pie. Press crusts together, then trim, fold, and crimp edges.
Cut four 2 by 1 inch oval vent holes in top. Place pie on heated baking sheet, bake for 10 minutes, then lover oven temp to 325 degrees and bake until crust is golden brown, abt. 40 mins. Cool on wire rack at least 3 hours. Serve at room temp.
and then there were the snacks. i mentioned a few that i made in my post last monday, but there were so many more fun snacks all week long. laura made the salsa with corn, black beans, tomatoes, cilantro, lime juice, garlic and red onion. aunt sandra made this fantastic guacamole:
Guacamole
Ingredients:
3 Haas Avocados, halved, seeded, I like to cut in half, squeeze and the use large spoon to clean out
1 lime, juiced
1/2 teas. kosher salt
2 Roma or regular tomatoes, seeded and diced
1/2 med. onion, diced fine
1 serrano pepper, sliced, seeded carefully w/spoon. Wash hands right away. This is a hot pepper. Chop very fine.
1 Tbs. cilantro (optional)
Directions:
In large bowel place scoop avocado pulp. I mash avocado with a fork b/c I like to keep some chunks. Save a seed to put in your dip to keep from turning dark. Cut each tomato in quarters and seed with your fingers by running along the inside. Add finely chopped onion and serrano pepper. Again, make sure you wash hands. Toss in lime juice to taste; salt. If you want add cilantro. Let sit at room temperature for 1 hour then serve.
and despite all of the mouthwatering good food, some of us just sat on the counter and ate potato chips

a yummy list
so i've been completely slacking on the menu planning lately. i've been making excuses like crazy and we've been eating out way too much. but i've promised myself that after this week the menu planning starts back up again! i honestly feel a little lost when i don't have my weekly menu in place by sunday evening. it's helped us in so many ways, we've had cheaper grocery bills, healthier meals, a less stressed out mama at dinner time, and we've tried so many great new recipes. hopefully some of my readers have enjoyed the recipes i've shared as well. i take the time each monday to share them in hopes that someone out there will be inspired. and i've enjoyed reading other fellow-blogger's menu plans. i've definately found inspiration through the menu-planning monday project on orgjunkie.com.
