I'm beside myself with excitement over today's guest post. I'm a HUGE fan of the blog: Skinny Mom's Kitchen. Tammy, aka: the Skinny Mom has shared so many delicious and healthy recipes on her blog, and she has also shared some great tips for losing weight. I find her weight-loss journey to be an inspiration. She is not dieting, but has made significant lifestyle changes that have been beneficial to her whole family. Meatloaf Cups from Tammy at Skinny Mom's Kitchen ::
Tammy, the author of Skinny Mom’s Kitchen, is dedicated to helping busy moms eat healthier and lose weight by teaching them how to combine calorie awareness with menu planning, freezer cooking, and other make ahead cooking strategies. She loves showing others how easy, and affordable, it is to serve their family healthy nutritious meals everyday.
When I was younger I use to hate when my mom home made meatloaf. I don’t know why I guess, as a kid, meatloaf is just one of those recipes you are suppose to hate - kind of like brussel sprouts.
Today, I love making meatloaf. For one it is very freezer friendly and second there are numerous healthy meatloaf recipes to choose from.
As I was searching for recipe ideas one day I came across many that called for preparing meatloaf using a cupcake pan. How clever! I don’t always have an hour to spare waiting for a full meatloaf to cook so in my opinion this is a genius idea. By cooking meatloaf this way the cooking time is literally cut in half. Also, it helps to keep portions under control which is always a bonus in my book.
Preparing meatloaf into little versions of themselves is very kid friendly. These miniatures are not nearly as threatening as a slab of loaf across their plate. My girls thought they were adorable and gobbled them right up.
If you like to freezer cook then you will be happy to know that these also freeze perfectly so go ahead and double or triple the batch to have some ready in the freezer. To freeze cook fully then let them cool slightly. Wrap in foil and freeze. When ready to eat take out of freezer and cook in a 350 degree oven for about 15-20 minutes or until heated through.

Meat Loaf Cup Recipe
Servings: 6
Serving size: 1 meatloaf cup
Nutritional Information:
Calories: 167 * Carbs: 11 * Fat: 6 * Protein: 16 * Fiber: 1 * Points +: 4 * Old Points: 4
Ingredients
½ cup ketchup
1 tablespoon yellow mustard ( I used horseradish mustard for an extra kick)
1 pound ground beef
1 teaspoon Worcestershire sauce
1 tablespoon dried onion flakes
¼ teaspoon salt
½ teaspoon fresh ground black pepper
½ teaspoon dried oregano
1 egg, lightly beaten
¼ cup whole grain breadcrumbs
Directions
Preheat oven to 350 degrees.
Step 1. In a small bowl, mix together ketchup and mustard. Reserve and set aside about 2 tablespoons of the mixture.
Step 2. Combine remaining ketchup mixture and the rest of the ingredients in a medium to large bowl.
Step 3. Divide the beef mixture into 6 equal portions. Shape them in a muffin shape and place in a muffin pan coated with cooking spray.
Step 4. Divide the extra 2 tablespoon of the ketchup mustard mixture among the 6 meatloaf cups.
Step 5. Bake at 350 for 25 minutes or until done.
****KATIE'S NOTES :: I tried these this week and they were DELICIOUS! One recommendation I have is to put a cookie sheet under the muffin pan while it cooks, because I had some grease spilling over.

my little clown
This school year Max has been taking Circus Mojo classes once a week after school with Paulie the Clown and all of his clown friends. Max LOVES Circus Mojo! It's a perfect place for him to be. He can clown around, but it's not all about goofing off. He has to follow directions, work as a team and work on his balancing skills. I have loved watching both his clown skills AND his self confidence blossom while he's been enrolled in Circus Mojo.

PowerCapes Review & Giveaway {CLOSED}

Each year for Halloween I brainstorm with the kids for costume ideas. I try my best to steer them towards coordinating costumes, but that can be hard with four kids. Last year they decided to be Super Heroes, so I set about finding the perfect Super Hero capes. I found just what we were looking for when I stumbled upon PowerCapes.com. It's this amazing website where you can design your own personalized Super Hero cape. How cool is that?!?! I sat down with each of my kids and they created their own masterpiece. We had so much fun working on this! Each cape ended up so cute & unique. Ella's is a little bit girly, Sam's mimics the costume of his favorite hero, and Max spent quite a while working on his cool color scheme. When the capes arrived in the mail the kids flipped out, and so began my life surrounded by super heroes.

a peaceful shower
I think I have found the perfect way to occupy my toddler while I take a shower so that I don't have to worry about what he's getting into. I simply fill the sink with water and let him play with bath toys in it. Genius! He loves it! The only downside is that I can't pull him away from the sink when my shower is over, because he's having so much fun.
How do you keep your little ones occupied while you take a shower in peace? I'd love to hear your ideas!

Attention All LEGO Fans :: LEGO KidsFest is coming to Cincinnati!
I think I have mentioned before that our family has a bit of a LEGO® addiction. The kids (and sometimes the parents too) love to create & build. I think LEGO bricks are one of the greatest toys out there (except when I step on one...then I hate them). They encourage creativity, and build fine motor skills. In our house playing with LEGO bricks ends up encouraging cooperation and teamwork. I love them! So you can imagine how thrilled I was when I heard that I would get to promote the upcoming LEGO KidsFest tour that is coming to town in March. Our whole family is giddy in anticipation of the big event!
The LEGO KidsFest is a giant traveling LEGO expo coming to Cincinnati’s Duke Energy Convention Center March 23 - 25, 2012. It is going to be a Lego-Lover's dream come true! There will be THREE ACRES of Lego action going on, including:
• LEGO Model Gallery: 40 life-sized models made entirely from LEGO bricks
• LEGO Master Builders: live demonstrations and activities from the crew who get paid to play
• Creation Nation: build your own creation to add to a custom map of the U.S.
• Race Ramps: build your own custom car, then race it down the ramp against friends and family
• LEGO Games Arena: roll the dice to play LEGO board games
• Construction Zones: creative free build, play and display areas
• LEGO DUPLO®: younger visitors can explore imagination through building
• LEGO Retail and KidsFest Marketplace: purchase LEGO merchandise and official KidsFest tour goods
• Brick Pile: a gigantic pile full of LEGO bricks for creative play and enjoyment
• Monochromatic Builds: bricks of a single color to foster group creativity
• Brickscapes: fantastic displays that combine lots of LEGO and DUPLO sets

My kids are over the moon about going, but I honestly don't think they have any idea of just how very cool this adventure is going to be! Menu Plan Monday ~ In Reverse ~ February 13
I am participating in Menu Plan Monday at orgjunkie.com, but unlike most of the other participants who plan their menus and post them that week, I'm always a bit behind, and I post my menus a week later. I do this so that I can let you know if I try a new recipe and it's not that great. I don't want to blog about a recipe if it's no good. I cannot emphasize enough how much menu planning has helped me out. I'm spending less at the grocery store, we are eating out less, and eating healthier foods. I'm not as stressed out at dinner time trying to pull something together with whatever ingredients I have on hand. It takes a bit of time on the weekends to create our menu plan, but all week long I'm thankful that I took the time to get organized and make a plan! I look at my calendar for the week while menu-planning and figure out what kind of meal would be best for each day. Busy evenings call for crock pot cookin' while Friday night family nights are a little more relaxed and I can take my time cooking. Participating in MPM has also inspired me to find new recipes for my family, and I hope that when you read this post you can find new recipes for your family as well!

the year of the handmade valentines
Nearly every Christmas the kids and I work together to make the Christmas cards that we send to family & friends. It's a huge undertaking, but it's always fun to work with them and let them get creative. And each year we have a craft day as a family and make each other valentines. But for some reason I've always bought the valentines for their classmates at the store. Until this year. A few weeks ago they asked me if we could make our own Valenintes to give to their school friends, and so we did. Thank goodness for Pinterest and all of the cool ideas floating around out there on the interwebz. Ella chose a valentine to make in which she had to sew, and she loved it. The boys picked a monster valentine, which forced Mama to buy a new cricut cartridge (no complaints, I love it!). I thought that making 60+ valentines was going to be a royal pain, but it ended up being fun. The kids did much of the work themselves, and were so happy to be creating. I think that perhaps we will make our valentines every year now. (Hold me to that next year!)

Toddler Valentines & Fine Motor Skills
Valentine's Day is coming up quickly, and our family loves to celebrate this holiday. Michael & I try to sneak out for a date night (any excuse for a date night), but the kids get more excited than us about Valentine's Day. You can read more about our Valentine traditions here.
Every year I bring out a box of Valentine crafts. It's a simple collection to put together. In the box I have paper of all sizes (scraps from my card-making and scrapbooking) - some are patterned, some are plain, most are red & pink. I also have bunches of heart stickers (which you can find for 50% off at Hobby Lobby sometimes). Another thing I've added are paper doiles or old valentines. Then I pull out the crayons, tape and scissors and it's the perfect Valentine Craft Kit!
This week I spent some time with a couple cute toddler boys and decided it would be fun to make paper valentines. It was not until we started working that I realized it was more than fun...it was great fine motor practice for the wee ones. Peeling stickers & writing with a pencil strengthens their fine motor skills & takes patience and practice and dexterity. And Sam had an opportunity to work on his fine motor skills by cutting out hearts with my funky scrapbooking scissors. Little did they realize while they were crafting that they were also honing skills that will be so important for them as they grow. Other activities to encourage fine motor skills in young children is to let them clip coupons with you, sew with yarn on plastic canvas, use small tongs (like the kind in Operation games) to pick items up (like cotton balls) and put them into a container, play with playdough, and don't be afraid to let young ones explore with crayons, pencils, markers & scissors...this is how they learn!{this moment}

Korean Stir Fry
My friend Michelle always has such tantalizing menu plans each week on her blog I'm Living the Good Life. She also has been known to post some delicious recipes of her own to share with her readers. I was very excited when she agreed to do a guest post for my readers! She is sharing a family recipe that I cannot wait to try! Thank you Michelle!

When I’m not corralling kids, I do love to cook. I especially like to try new recipes and I have a great one to share today.
Korean Stir Fry (Japchae)
One year at Christmas my cousin’s wife, who is Korean, explained to us the custom of spending a whole day together as a family making food for the holiday dinner. She and her sisters would sit around a table preparing dishes, chopping vegetables, talking and laughing. This sounded like such a great tradition. It is a time for family to laugh and cry about the year. It is a time to remember relatives who have gone before us. It is a time to celebrate the future!
Of course, this was the year my Aunt decided to use Market Day and ordered everything but the turkey on line. We looked like a real tight family unit. This year for Christmas, Suchin made a traditional Korean stir fry dish. It was delicious, and unlike any stir fry I’ve attempted to make. This is probably because she used ingredients from the Asian grocery store, rather than the special aisle at Kroger. She gave me her recipe and I added my own touches.
Ingredients:
1 Onion
Garlic (at least 2 cloves, but as much as you like)
1 package fresh mushrooms
1-2 carrots shredded or chopped
1 bunch of spinach or broccoli chopped (pick your own green here)
1 piece of stir fry steak (any thin steak good for stir fry)
1 Asian pear shredded
1 kiwi shredded
Soy Sauce
Sesame Oil
Crushed Cashews or Peanuts for topping (optional)
The trickiest part about this recipe is to get the right noodles. There are so many different types of noodles in the noodle aisle……rice noodles, udon noodles, ramen noodles, pad thai noodles….so confusing! Here is the package of noodles you need. Just remember one thing: sweet potato starch. That is the only ingredient. So, check the ingredients on the package and that is all that is listed. You can find these at an Asian grocery store.
Marinate the meat in a mixture of shredded Asian pear (they are the round golden ones that look like apples. You can find them at Kroger in the produce aisle) and shredded kiwi. Marinate this for at least an hour, but more if you want. I cut up the meat and throw it in a baggie with the fruit. When it’s done marinating, you can cook the whole mixture on the stove top.
While your meat is marinating, you can start chopping vegetables. I have a couple of cute helpers that I employ.
Peel and mince your garlic. I like to use the food processor to make it extra fine. And, we use a lot of garlic!
Peel and chop your onion.

Shred or chop the carrot(s). Slice the mushrooms. Prepare the other green vegetable for cooking (broccoli or spinach, your choice).
After all of that peeling and chopping, and maybe some union negotiations from your workers, take a break for happy hour! After a two-year old and 4-year old “helped” me, I needed a time out.
When your meat is done marinating, put it in a skillet (or wok if you have one) with the fruit mixture and a little oil and cook the meat.
While the meat is cooking, bring a large pot of water to boil. Add one bunch of the noodles (the bag may be divided into three bunches).
Boil noodles until soft and drain.
Yes, they look kind of gross at this point, but trust me, they will be fantastic!
Back to the meat! In the pan with the meat, add the garlic and onions and cook until tender. Be careful not to burn the garlic, as it will cook fast. Toss in the carrot, mushrooms and green vegetable and cook a few more minutes. You still want some crunch to the broccoli if you are using that. Add the noodles and mix well.
Now for the dressing…. Some of us are measurers, some of us are not. I hate to tell you at this point that I am not a measurer. However, I will give you a guideline! I add a mixture of soy sauce and sesame seed oil to taste. I add enough to turn the noodles brown, and enough to taste a hint of sesame. You may start with 3 tablespoons of soy sauce and 2 tablespoons of sesame seed oil. You will probably need to add a little more. Keep tasting it until you are satisfied. I add crushed peanuts or cashews to each individual serving, if desired.
