Caribbean Chicken Burger
1 lb. ground chicken
1 14.5 oz can of Red Gold Lime Juice & Cilantro
Salt & Pepper
Combine ground chicken and Red Gold tomatoes (drained). Form into patties.
Season. Grill
As desired, served on Toasted bun or lettuce. Layer guacamole or avocado or
roasted pineapple slice. Top with a mango chutney or fruit salsa.

Favorite Recipe using Red Gold Tomatoes:
Mexican Beef and Zucchini Skillet
Ingredients:
5 oz ground beef (93%), cooked (1 Lean)
1/2 cup Red Gold tomatoes with some of the liquid (1 Green)
1 cup raw zucchini, chopped (2 Greens)
2 tbsp salsa (2 Condiments)
1/2 tsp taco seasoning mix (.66 Condiments)
Directions:
Combine ground beef, rotel tomatoes, zucchini, salsa, and taco seasoning mix in a medium skillet. Cook over medium-high heat until zucchini is tender, about 5 minutes.

Slow Cooker Balsamic Chicken from Skinny Ms. -- LOVE this!
Ingredients
•4-6 boneless, skinless, chicken breasts (about 40 ounces)
•2 14.5 oz can diced tomatoes •1 medium onion thinly sliced (Not chopped)
•4 garlic cloves
•1/2 cup balsamic vinegar
•1 tbsp. olive oil •1 tsp each: dried oregano, basil, and rosemary
•1/2 tsp thyme
•ground black pepper and salt to taste
Directions
Pour the olive oil on bottom of slow cooker, add chicken breasts, salt and pepper each breast, put sliced onion on top of chicken then put in all the dried herbs and garlic cloves. Pour in vinegar and top with tomatoes.
Cook on high 4 hours, serve over angel hair pasta
