It seems like this is the seaons when gardens are teeming with tomatoes and basil, so we've been doing our best to take advantage of this and use lots of fresh basil and tomatoes in our meals. And you already know we love homemade pizza. So we combined our love of fresh basil & tomatoes and our love of homemade pizza and made Fresh Caprese Pizza! This is not only easy to make, and delicious to eat, but it's also very inexpensive to make! Especially if you or a friend has a garden full of basil and tomatoes!

Ingredients:
**For the Base (instead of traditional sauce), mix together: 4 Tbs. Olive Oil; 3 heaping spoonfuls of minced garlic & 1-2 tsp. Oregano I kind of just wing it with the sauce...and sometimes I use it all, sometimes I have extra.
Pizza Dough for one crust (this is the recipe I use - awesome)
1 Tomato sliced thin
Shredded Mozzarella Cheese
A handful of basil leaves, cut into small pieces with kitchen scissors
Directions:
Preheat
oven to 450, warming the pizza stone in the oven while it preheats.
Roll out the dough to your liking, sprinkle a bit of corn meal on the
stone, then place your dough on the stone. Spoon the oil/garlic/oregano
mix over the crust, spreading evenly up to about an inch from the edge
of the crust. Then sprinkle basil over the olive oil mixture. Sprinkle cheese all over pizza (stopping about an inch or less from edges for crust) and top with sliced tomatoes. The picture above is what mine looked like bBake about 10 or 15 minutes, until pizza is
finished. Let cool for just a couple of minutes and then slice it up and chow down!
