Fried Corn

Summer seems to be Corn Season.  Whether you boil it, grill it or fry it, corn is a popular side dish for summer meals, especially cookouts.  My favorite way to prepare corn is to fry it.  Some people call this style of corn “succotash” but I just call it fried corn.

Fried Corn ::

Ingredients:

4 or 5 Ears of Corn (cut the corn off of the cob)

2 Bell Peppers, chopped

½ Red Onion, diced

2 Tbs. Bacon Grease**

Salt & Pepper to taste

Heat the bacon grease in a skillet over medium-high heat.  When it is hot add the chopped up veggies and corn.  Stirring frequently cook for about 10-20 minutes, tasting often and adding salt and pepper as needed.  We like a lot of salt and pepper!  The cook-time depends on how firm or tender you want your veggies, so when they taste perfect to you then they are finished!

**I think Bacon Grease is the best to use, but if you don’t have any you could try butter or oil.

Travel Journals for Children

Recently we took a long vacation to Florida (read all about our adventures in Siesta Key and Walt Disney World!).  Before we went the Easter Bunny brought Travel Journals for the kids.  The teacher in me wanted to try to make our trip somewhat educational...so why not get them to do some creative writing and drawing while we were on vacation?!?  They loved their journals, and were so serious about documenting their adventures.  I loved watching them work on them...both while we were in Florida, and when we came home.  I can't wait to show these books to them again when they are adults.

The materials for this project are simple, and it can be as cheap or expensive as you'd like.  I opted for cheap, and bought them each a composition notebook, colored pencils and tape.  And then I found some scrapbooking supplies on sale for them to use...perfect little pockets and such.  I also dug out some of my own scrapbooking stickers for them to use.  You could really go all out with this project and get your children a bunch of scrapbooking supplies, but I wanted to keep it pretty simple.  For me it was all about their writing.  While they worked I kept reminding them to write stories and not just tape in the pictures.

Another journaling idea for young children is the Summer Journal, read about those in this post.  How do you make sure your children keep learning even when they are not in school?

Crayola Summer Fun Giveaway

THIS GIVEAWAY IS NOW CLOSED.  Congrats to Renny & Mel who said:  "Favorite way to keep my son happy on a long car ride: lots of tunes. "Family Time" by Ziggy Marley is our favorite album at the moment."

Please email me at: Katie(at)Cards-by-Katie(dot)com to claim your prize!  Thanks to everyone who participated, and stay tuned for more great giveaways, tasty recipes, inspiring menu plans, crafts for the kids, and Sunday Sayings!

I wanted to start this post with a really cool picture of the giant box of goodies that I got in the mail from Crayola & Blogspark, but in their excitement the children took all the treasures out before I could get a snapshot of the entire collection.  That's a testament to how cool this collection of Crayola products is...and the best news is, I have a second collection to give away!  Even though I don't have a picture of the group of goodies, here's a description from the folks at Crayola about the products in this giveaway:

As Crayola helps keep your kids occupied in the backseat this summer, you can enjoy the ride because Crayola Color Wonder products are made to let kids express themselves without making a mess.

- With over 10 feet of coloring, the compact Color Wonder On the Go Tiny Tube lets kids tear off a perforated activity page for magical coloring fun at home or on the road. The tube fits in the cup holder of a car and can store the included markers inside, making it a perfect on-the-go activity. Adhesive-backing allows paper to stay in place while coloring so kids can easily create anything imaginable.
- Bring your friends on the road with the Disney and Barbie Crayola Color Wonder Mini Coloring Pad and Markers. With more pages than ever, kids will enjoy coloring a variety of pictures featuring some of their favorite characters. These fun coloring pads are also available in mini sizes that are perfect for tucking into a bag and bring them with you wherever you go.
- Get back to basics and allow kids to draw what they see outside their car window or daydream and draw whatever they imagine with the Color Wonder Coloring Pad. Kids will be entertained in the back seat with 5 sheets of Color Wonder paper and 2 Color Wonder Markers that only leave a mark on special Color Wonder paper.
- Create, erase, and create again with Crayola Dry Erase products that allow kids to unleash their inner artist over and over without carrying around hundreds of sheets of paper.
- You’ll be all packed up and ready to go with the Crayola Dry Erase Travel Pack that features a dry erase surface, along with dry erase crayons, an eraser and a sharpener to help sustain hours of fun. Take out the game and activity templates and let kids challenge each other to different games using vibrant, washable markers.
- Everyone can get in the game with the Crayola Dry Erase Zany Play that comes with four bullet tip dry erase markers and boards that your family can use to play games like tic-tac-toe, the dot game and mazes.

I have to say, this product review and giveaway were perfectly timed for me.  The package arrived in the mail the day before we were set to leave for a weekend away.  I'm always looking for new things to occupy my kids in the car, and these products did the trick!  The car ride was quiet and happy, which made for one happy mama :)

So...do you want to win a Crayola Summer Fun pack for your family?!?  It's easy!  Just leave comments below and a random winner will be drawn on Wednesday, July 11th at 2pm and announce the winner here on my blog and on the little things facebook page.  The winner will have 48 hours to respond via email or another name will be drawn.  Here are some of the items you might find in your prize package: Crayola Color Wonder On the Go Tiny Tubes, Color Wonder Coloring Pad, Color Wonder Barbie Mini Coloring Pad and Markers, Color Wonder Drawing Pad and Markers, Dry Erase Travel Pack, Dry Erase Zany Play, and Princess and the Frog Mess Free Color Wonder Activity Sets

a dip in the pool...

I've been such a slacker when it comes to blogging this summer.  We've just been having too much fun, and I've been quite busy with note card jobs (yippee!!).  One of our favorite things to do in the summer is go to the pool in the evenings.  I prefer taking the kids in the evenings for many reasons...it's less crowded, Michael can join us, and the sun & heat are not so intense.  I like packing up a dinner and swimming right up until bedtime...then it's home and straight to bed.  Last night the baby was so exhuasted that he put himself to bed on his own.  Here's a few pictures from our fun last night.  Max was away at Cub Scout camp (where he shot TWO bullseyes with the BB Gun).

the end of summer ~ 2011

summer has come to an end for our family.  it's still hot outside, but the kids are back in school, so our adventuring days are going to be few and far between now.  i wrote about our summer bucket list in june, and i am happy to say that even though we didn't get to do everything on our list, we still had quite a bit of adventuring this summer!  we went on hikes, had two great vacations, went swimming, explored local attractions, and much more.  the one thing we didn't do much of this summer was clean...so i'll be spending the next few weeks trying to get my house back in order.  how did you do on your summer bucket list?  did you have a fun summer?

here i am!

Is anyone out there in my blogosphere wondering about my sporadic posts lately?  I was doing so good at posting on a regular basis, and then POOF, lost my mojo!  I've been a bit pre-occupied with all our summer happenings.  We're on the go quite a bit with art classes, cooking classes, swimming, hiking, and general adventuring.
And I've spent quite a bit of time working on note card jobs (thank you dear customers!).  For anyone who is interested, I'm having a Christmas in July sale right now, all of my seasonal cards are $3 a pack.  Just email me at: Katie(at)Cards-by-Katie(dot)com if you are interested in ordering!

I've also designed a few new sweet & simple note cards:
the lily pad photo note

and the butterfly "just a note" card
you can find both of these at my Etsy shop

Sorry for the shameless business plugs folks...just trying to find all the snail mail lovin' people I can!  So whenever we are not at play, and that is quite often, you can find me working on cards at the dining room table, surrounded by legos, arts & crafts, and other random activites the kids are working on.  We've spent most of our time adventuring though, exploring our area and just having fun.  I really try to make the kids' vacations from school fun for them (and maybe a bit educational at the same time).  Here's just a couple examples of our adventures...

We've been on a pirate ship where the kids had to walk the plank.

And we made very cool glass art at Brazee Art Studio in Oakley.
please note, these pics were taken before our people were fired in the kiln, they look much cooler now!

You can read more about these adventures on http://www.familyfriendlycincinnati.com/ (another shameless plug!)

I'm also determined to get more organized this summer, so I try to fit in some work on that when I can.  This week I've got a great discount on the blog for CleanMama printables, check out my post about her Etsy shop and take advantage of the deal, it ends this Sunday, 7/24.  I'm going to be ordering a few things myself tonight!

So what have you been doing on these hot summer days?  And feel free to give your small business endeavors a shout out in the comments, you all know I've been doing it for most of this post ;)

Bourbon Slush!

How hot is it in your neck of the woods?!?  It's unbearably hot here in the greater Cincinnati area.  I would take winter with it's snow and ice over this hot weather any day.  So I'm always looking for ways to stay cool.  My favorite way to stay cool is to sip on a bourbon slush.  Yum. Yum. Yum.  My mother-in-law shared this recipe with me, and now I share it with you my faithful readers.  Stay cool.  And feel free to leave links in the comment section for your favorite cool treat for a hot summer day!

Bourbon Slush
Mix together:
2 cups boiling water + 4 tea bags (let steep for a few minutes).  My friend Nicole used a peach flavored tea, and I really liked this change in flavor!

add this to:
7 cups boiling water
1.5 cups sugar
Large can of frozen OJ concentrate
2 small cans frozen Lemonade concentrate
2-3 cups Bourbon (I always opt for 3 of course!)
Stir together and pour into plastic containers & freeze.  Then enjoy.  And share with me if you are so inclined.

our family's summer bucket list

It seems that summer bucket lists are quite popular this summer, so we've made one of our own.  I sat down with the kids and we created a long list of things we want to do this summer.  Some of the items on this list are things we already do on a regular basis, while others are new to us, or things we don't get to do very often.  I don't know that we will be able to have all of these adventures, but having this list will help us focus on what we want to do for fun.  It's pretty lengthy (remember I had three young ones helping me dream up this list) but we've already crossed a few things off in the first few weeks of summer break.  I can't wait to see what else we end up doing this summer!  Please feel free to leave comments below if you have ideas I should add to this list!

Our summer bucket list: (Updated 8/18/11)
We were lucky enough to do many things on our bucket list this summer!  We even added a few things:  Hike at Shawnee Lookout, A ride on the Anderson Ferry, A hike at Dinsmore Homestead, and two vacations!  We were very busy!  We'll have to add some of these activities on to next summer's bucket list!

~ Storytime
~ Highfield Discovery Garden
~ Visit Ault Park
~ Explore Fort Ancient
~ Newport Aquarium

beyond books ~ summer journals for children

On the last day of school I sent an email to my son's teacher thanking her for a fabulous first year of school for him, and asking what we should focus on over the summer to make sure he is ready for first grade.  I don't want to sit and do flashcards or make him write lines or anything...but I do want to keep him sharp and practice skills he may need extra work on.  As a preschool teacher by trade, I look for fun natural learning experiences for our children.  I fill their summers with all kinds of learning, like nature walks, reading for the summer reading program at the library, learning about math while cooking, and things like that.  Max's teacher had the greatest suggestion for working on his emerging writing skills.  She suggested that he keep a journal over the summer, which would help him work on handwriting, as well as sounding words out and spelling them on his own.  I loved this idea!  And I figured it would be great for all of them.  Ella can work on her creative writing skills, and she loves to write in journals.  Sam is at a very basic level with pre-writing, we're just now working on his name.  But he can draw and "write" whatever he pleases.
So we went to the store and bought four composition notebooks.  Yes, four, I bought one for the baby (ahem, toddler).  He loves to do whatever the big kids are doing, and at 16 months, I think he is ready to be using crayons & pencils more often without chewing on them.

Then I covered the front of the book with white cardstock, and let the kids decorate their covers (I decorated Henry's for him.)

Then we got to work on the journals.  I gave them some writing and drawing supplies: color pencils, crayons and writing pencils.  You could really expand the selection of materials you offer your kids...markers, photographs they have taken, construction paper for making pictures, etc.

For the first page of the book I asked them to do an "About the Author" page.  It was fun watching them draw their self portraits & Ella wrote quite a bit on her page.  Max wrote "I'm the Big Brother" on his, and Sam's self portrait was the best stick person I have seen him draw to date.  So already the journal is helping him hone his skills!

I absolutely loved watching them work on their books, with such intention and seriousness.  I told them that they could use the journals to write about whatever they liked over the summer.  I suggested that they could write about adventures we had, places they wanted to go, or just write stories.  I encouraged them to write whatever they wanted.  I want this to be a totally creative outlet for them, with very little direction.  I might suggest a theme for the day, or ask them all to draw a picture of their favorite place to go or something like that if they are in need of inspiration, but so far they went at it with zeal and enthusiasm and needed no prodding or ideas from mama.  Even little Henry was hard at work for quite a while making lovely green lines.

The first day we worked on them Ella and Max wrote about a science program that we had attended about Colors & Rainbows.  It was great, because they spent a while discussing what they had learned and put it on paper, without me prompting them at all.  Sam drew weaponry in his journal...because that's what Sam does, he's a jedi at heart.  Here's a sample of Ella's work:

We have only been on summer vacation for two days now, so there has not been much writing yet, but I feel safe in predicting that these journals will be written in all summer long, judging from the excitement shown on the first day.  I want to take the journals with us when we travel, encourage Ella to take pictures to add to hers, and encourage them to add other mementos from their summer...ticket stubs, items found on nature walks, art work from the art class they are taking, etc.  These journals are going to be treasures that remind them of their fun childhood summers someday!  And all the while they are working on these, they will be learning & practicing writing skills.  It's a perfect project for the summer!  That being said, I feel I need to say that I won't be forcing them to write in these journals.  I want them to learn and practice handwriting & spelling, but I don't want it to be a chore.  I want summers to be fun, relaxed and enjoyable.  I just think that with my children's love of books, creating their own book is really going to make them happy.

If you do decide to do this project with your new writers, I have to tell you about this excellent resource that Ella's teacher gave the children this year...it's the Words I Use When I Write booklet.  It's a spelling dictionary for young children, it helps them to find the word they are having trouble spelling, instead of them having to ask how to spell every other word.  This is perfect for Ella because she is very particular and wants to make sure all of her words are spelled correctly.  She can use this booklet to self-correct.

The pages have quite a few words for each letter, and then lines on which the child can add more words that they use when writing.
It really is a handy resource for new writers!

I hope that your family enjoys this FUN learning project for the summer, and please leave a comment below if you have some fun learning projects planned for the summer.
