Chicken Broccoli Casserole

This is one of my Mama's recipes, that I have loved since I was a little girl.  It's quite easy to prepare, and you can even double the recipe and make an extra casserole to freeze for later.  I often do that, because I love having meals on hand in the deepfreeze.  It's a yummy and hearty meal, and even my picky children enjoy it.  I like to serve it with Chicken & Garlic rice and fresh fruit on the side.

Ingredients:

1 package boneless, skinless Chicken Breast
3 stalks Broccoli
2 cans Cream of Chicken soup
1 cup Mayo
1 tsp. Lemon Juice
½ cup shredded Cheddar for mix; ½ cup for topping
1 stick Margarine
1 sleeve Ritz crackers

1. Cook chicken breasts for 20 minutes at 400° (until done). Cut chicken into bite sized pieces.
2. Cut broccoli into bite sized pieces and steam.
3. In a big bowl combine soup, mayo, lemon juice, ½ cup cheddar & chicken ~ stir to mix.
4. In a 9x13 casserole dish put broccoli on bottom then top with chicken mixture.
5. Crush Ritz crackers, and melt the margarine. Mix the two together and spread over chicken mixture.
6. Bake at 350° for 20 minutes, take out and sprinkle cheese on top. Bake until cheese melts (about 5 minutes). Enjoy!

 
This picture does not do justice to this casserole.  I don't think that casseroles photograph well, they never look as tasty as they really are.

Sounds very tasty. Too bad I'll be the only one eating it. Dave HATES brocolli with a passion, Maggie will eat it, but only with ketchup and matthew doesn't like cheese mixed in. What a bunch of WACKOS! Thanks for the recipe!!
