lemon basil chicken
- four boneless, skinless chicken breasts, washed and trimmed
marinade: 3 Tbs. fresh lemon basil chopped (or regular basil if you don't have lemon on hand), 1/4 cup lemon juice, 1 Tbs. olive oil and 3-4 heaping spoonfuls of minced garlic.
place chicken between wax paper and pound with a mallet to flatten a bit.
combine marinade ingredients and mix well.
put chicken & marinade in a ziploc bag and refrigerate for one hour.
place chicken on hot pan and cook for 10-12 minutes until done. turn the chicken often.enjoy - i loved mine with noodles & parmesan!
