Guacamole

My cousin Mara made the most amazing guacamole for our family Easter party.  I could not get enough of it.  She shared her recipe with me and Sam and I made it this week to take on our picnic at the zoo.  It was a hit!  And quite easy to make!  And it was so yummy that Henry and I ate it (even though it was brown) the next day for lunch.  This recipe makes quite a bit of guac, so if you ever have one of those weekends with lots of parties to attend this would be a perfect dish to make!

The Ingredients:  3 ripe avacados (I ended up using 4), a can of diced tomatoes with chilies (drained), a red onion (diced), 1/2 tsp kosher salt, 1/4 tsp. pepper & 1 tsp. lemon juice

Directions:
1. Peel avacados & cut into cubes
2.  Mash avacados, onions & drained tomatoes together
3.  Stir in salt, pepper & lemon juice
4.  Enjoy!

Sam LOVES to mash things!
