
The cast of characters:
(This is enough for me + Henry, adjust numbers to meet your needs)
PAM or butter to grease the pan
3 eggs (I do 2 whites and one whole egg)
1/2 tsp. Salt
1 tsp. dried basil, or 1 Tbs. fresh basil
a splash of milk
1 Tbs. Goat Cheese (or more if you'd like - crumbled or fresh grated)
Heat a small skillet sprayed with PAM over Med-High heat, add eggs, basil, salt & milk. Stir until eggs are cooked (less than 5 minutes...watch closely and stir often!). Once eggs are cooked through remove from heat and stir in goat cheese. Enjoy!

These sound great! I love to scramble my eggs with some tomatos from our garden and cover in havarti cheese.
