Grilled Cheese with Chicken & Lemon Basil

We've had alot of basil and lemon basil come our way recently, and I've been trying to find ways to use every single leaf of basil.  One of my favorite things to do lately is to dress up our grilled cheese sandwiches.  First we had Caprese Grilled Cheese, and then this week I experimented with grilled chicken and lemon basil to create a divine grilled cheese. 


Ingredients: 2 Slices of Bread (I like to use sourdough bread) Mozzarella cheese (can be slices or shredded works too)  
Italian blend of shredded cheeses (optional - I just have a bag from Trader Joe's that I LOVE)
Grilled Chicken chopped up into small pieces Fresh lemon basil, chopped up (I use my kitchen scissors to cut it up) Butter  
Directions: Spread butter lightly on one side of each piece of bread.  Heat skillet over medium-high heat.  Place bread (butter side down) on the skillet, top with cheese, chicken, basil, a bit more cheese, and then the second slice of bread (butter on the outside).  Cook over medium high heat, until each side is golden brown...then put both sides together, turning as needed until both sides are a perfect golden brown and cheese is melted.  Then enjoy!
