A few weeks back we went over to our friends' house for dinner, and Chris made this amazing salsa and added a peach to it. It was delish! He didn't use a recipe, so I couldn't steal it from him. I had to come home and make one up myself. So I started with a recipe for Pico de Gallo we got with our produce from the CSA and went from there. And now, voila, we have peacho de gallo!
Peacho de Gallo
2 cups tomatoes, chopped
2 peaches peeled and chopped
2 jalapeno peppers minced
1 small onion finely diced
1/2 tsp. Kosher salt
1 clove garlic, minced
1 Tbs. olive oil
2 Tbs. Lime dressing
1/2 cup lemon or lime basil (or both!) chopped
Stir ingredients together and then chill for one hour before serving. Enjoy!
