Black Bean Quesadilla

A few weeks ago Tammy from Skinny Mom's Kitchen posted a recipe for Black Bean & Rice Quesadillas.  I wasn't that interested in having the rice on the quesadilla, and I did not have all of the ingredients on hand, so I changed things up a bit.  What I did have on hand was the Black Bean mixture from Tammy's Black Bean & Rice Burritos, which I love the flavor of.  So I used that black bean mixture to make my own black bean Quesadillas.  Try these yourself, they are delicious, and easy to make. AND if you make the black beans from her recipe you can serve them as burritos as she does, or over rice for beans and rice...or as a quesadilla.  The possibilities are endless!  I always double her recipe for black beans for the burritos and freeze them, and now I have two recipes I can make in the same week with the beans!

Black Bean Quesadillas

Ingredients:
Whole Wheat Tortillas
Jalapeno Cheese (shredded would have worked better, but I had sliced)
Black Bean mixture - not just plain black beans!  Use SMK's recipe!

Simple to make:  Just cook a tortilla over med-high heat (spray griddle with PAM).  On HALF of the tortilla, spread cheese, then beans, then top with cheese.  I broke my slices of cheese up into pieces.

Fold the tortilla over, cook both sides until golden brown.

YUM!
