Fried Corn



Summer seems to be Corn Season.  Whether you boil it, grill it or fry it, corn is a popular side dish for summer meals, especially cookouts.  My favorite way to prepare corn is to fry it.  Some people call this style of corn “succotash” but I just call it fried corn. 



Fried Corn ::



Ingredients:

4 or 5 Ears of Corn (cut the corn off of the cob)

2 Bell Peppers, chopped

½ Red Onion, diced

2 Tbs. Bacon Grease**

Salt & Pepper to taste


Heat the bacon grease in a skillet over medium-high heat.  When it is hot add the chopped up veggies and corn.  Stirring frequently cook for about 10-20 minutes, tasting often and adding salt and pepper as needed.  We like a lot of salt and pepper!  The cook-time depends on how firm or tender you want your veggies, so when they taste perfect to you then they are finished!


**I think Bacon Grease is the best to use, but if you don’t have any you could try butter or oil.
