I am really struggling with planning (and sticking to plans) for dinners. School nights are getting the best of me with extracurriculars. I need to find some balance. Last week I did pretty good though, I not only made some great meals, but was even able to make some "extras" to stretch for other meals. I doubled the black bean recipe below so that I could freeze some for future use, and also kept some for pizza next week. I also made more Tikka Masala than usual for a leftover night. I just need to stick to the plan, and make homemade meals each night. I need to find meals to fit each night, especially the busy ones! And I want to keep loading up that deep freeze!

"Best" Hamburgers (on pretzel buns!)
