Slow Cooker Beef Stroganoff

I am always on the lookout for a delicious (and easy!) slow cooker recipe that makes my whole family smile.  This week I hit the jackpot with Slow Cooker Beef Stroganoff.  I searched online for a recipe, and I found several with just 3 or 4 ingredients.  They seemed easy enough, but I questioned how good they would taste without garlic...and onion!  So I created my own Beef Stroganoff recipe, and it was delicious if I do say so myself.  If you try it be sure to leave me a comment below and let me know what you think!

Slow Cooker Beef Stroganoff

Ingredients:
1.5 lbs. Cubed Stew Meat
2 Tbs. Worcestershire Sauce
1 ½ cans Cream of Mushroom soup
3 heaping Tbs. Minced Garlic
2 tsp. Dijon Mustard
¾ cup chopped Onion
½ cup Beef Broth
S & P to taste
4 oz. Cream Cheese
Egg Noodles (or other variety of pasta)

Directions:
1. Combine all ingredients except cream cheese and noodles in the slow cooker.
2. Cook on low for 8 hours.
3. Stir in cream cheese 15 minutes before serving – stir until blended
4. Serve over cooked noodles.

Cumberland Falls

This weekend our family had a little mini-vacation at Cumberland Falls State Park.  Ella's Odyssey of the Mind team was taking part in the State competition, so we used the opportunity to have a family getaway.  It was too short, but full of fun.  Despite the clouds and rain we managed to squeeze in a few walks and hikes.  The kids loved exploring the woods and the area around the waterfall.  We had a family vacation here in 2009 as well, and as we left today the kids asked if we could go back again someday.  We all love it there, in fact, we have enjoyed every state park in Kentucky that we have visited.  We are lucky to live in a state with such an amazing park system.  They take such good care of the parks, and provide clean & comfortable accomodations.  This little mini-vaca made me long to have more getaways like this.

LEGO KidsFest

On Friday we had the opportunity to visit the LEGO KidsFest when it came to town.  I can't tell you how excited my kids were to go!  Thank you to the folks at LEGO KidsFest for the tickets for my family, and the tickets they gave me to give away on the blog a few weeks back!  A grand time was had by all.  To learn more about LEGO KidsFest and where they are headed next check out their website!

property inspection

I simply cannot convey the proper amount of happiness to you when I write this, but be assured, I'm downright giddy.  After 10.5 long hard months my husband has finally completed renovations on our rental property.  I'm simply overjoyed that he won't have to be spending the majority of spare time in the evenings and on the weekends at the other house.  And I have to say, all of his hard work has definitely paid off.  The place looks amazing.  I'm so lucky to have a husband who has such knowledge, motivation, drive and determination.  I'm thankful that he has the know-how to take on a huge project like this.  I will share some before & after pictures from the renovations at a later date.  Tonight Michael put the finishing touches on, and we handed the keys over to our new tenant.   Earlier today we did the inspection, and Henry checked every single door in the place.  They all work.  They all slam.  And the floors are just right for running in circles.  So in his book the place is alright.  And I found a very old newspaper in a dusty old closet in the stairwell.  This house has such a rich history, I'm so glad we bought it, and so happy that my husband took such pains to make it beautiful again.

Trail Mix!

You all know how much I love to spend time in the kitchen...and so do my kids.  Unless we are cleaning the kitchen...that's another story altogether.  Out of all my kids Sam seems to enjoy baking with me the most.  At least once a week he comes up with an idea of something we "just have to" make.  One of his favorite things to make is Trail Mix.  It's so easy to make, you could probably do it right now, because all you need is some small bits of things that you already have on hand.  You can really throw anything you want into Trail Mix.  I always make up a big batch when we are going on a long car ride, and pull it out for them to munch on when they start getting squirmy.  If it's a special day I might even add chocolate into the mix, just to make them smile.
Here's how we make trail mix (it's so easy your kids could do it independently):
1. Collect your ingredients.  This time we used Cheerios, Pretzels, mini-Chocolate Chips, Marshmallows, Raisins & Goldfish.  Seems like an odd assortment of ingredients, but it's what we had in the pantry, and the kids loved it!

2.  Throw all the ingredients into a bowl.

3. Stir GENTLY

The First Day of Spring

Happy First Day of Spring to you!  How did you celebrate the "official" first day of Spring?  Our day included long walks, outdoor dining, dancing on rocks, bike riding, open windows, loud music, happy children, ice cream cones and a wee bit of splashing in a fountain.

Printable Recipe Cards

Are you looking for a unique & meaningful shower gift for someone you love?  My favorite gift to give a bride-to-be is a collection of family recipes.  I found the cutest printable recipe cards in Whisker Graphic's Etsy Shop.  They were reasonably priced and I can use the printable over and over again!  You can either print the recipe cards out blank (see above) and then handwrite the recipes, or you can copy and paste your recipe right onto the card and then print it out (see below).  Before the shower I usually ask any friends & family who are attending to email me a recipe, and then I print them all out on these super cute cards and then put them in a pretty recipe box (there's a huge selection of recipe boxes on etsy.com).  These recipe boxes are always met with appreciation and happiness.  I make sure to include recipes from special relatives who aren't with us anymore, like Nana...I always add in a few of her favorite recipes just to keep her memory alive & pass along her traditions.  If you are interested in printable recipe cards check out Whisker Graphic's website or etsy shop.  And they don't just have recipe cards...they have a great selection of other fun printables, twine, packaging materials, labels, stickers, and more!  I had so much fun shopping on their website...I just purchased a printable that I can use to make new business cards for Cards by Katie

A tour of Whole Foods

Last week I had the opportunity to join some of my fellow writers from Family Friendly Cincinnati for a tour of Whole Foods in Rookwood Commons.  I know this is going to sound crazy, but I was super excited about this tour!  Not only would I get to hang out with some very fun folks, but I would get to learn a little more about one of my favorite grocery stores.  When it comes to weekly grocery shopping, I'm a little unpredictable...I like to shop around sometimes.  I have a great local grocery store, but sometimes I like to step outside the box and visit other cool stores, like Whole Foods.  I've been shopping at WF since Sam was 11 months old.  This was the time that he was diagnosed with allergies to dairy, egg & peanut.  When he was first diagnosed I felt so overwhelmed & stressed out about it.  At the time, my local grocery store did not have as much to offer in terms of allergy-friendly foods.  They've since expanded their health foods section, and have a much better selection.  But back then there just wasn't alot to choose from there.  I heard about Whole Foods from another Mama of a child with allergies and decided to check it out. 
Imagine my delight when I first visited WF and discovered aisle upon aisle of healthy foods with countless options for people with allergies.  I found a HUGE selection of diary-free yogurts, cheeses, milks, and more.  I was able to purchase foods that the other kids liked to eat so that he wouldn't feel left out.  I didn't want him to have to eat something else while we all ate pizza, and I didn't want to make the whole family go dairy free, so I had to figure out some sort of solution.  Enter shredded rice cheese, which I used to make Sam his own little pizzas.  They also had box mixes for various allergen-free desserts, which was a huge help when we had parties to attend.  It was no fun telling a toddler he couldn't have cake at a birthday party.  So now at least I had a backup plan!
Today Sam's allergies are much better, he's only allergic to peanut, but I still love to shop at Whole Foods.  They have so many natural foods you might not find at other stores, a huge selection of organic produce and local produce, a cheese section that will make you drool, a large selection of Gluten-Free foods, an entire wall of bulk foods, and much much much more!  The bulk foods section is our family's favorite thing about WF.  The kids love searching the bins for special treats, and I can always find random rices, grains & beans that are hard to find.  Another thing I love about WF is their staff.  Our tourguide last week, a gentleman named Nick was awesome.  His tour was interesting and very informative, and I even tried some new foods!  All of the staff at WF is great though, whenever I have a question they are quick to answer it, or if they don't know the answer they find someone who does.  I'm always amazed at how knowlegable the staff is about all of the different foods they stock.  I had so many questions when Sam was first diagnosed, and it was the staff at WF who helped me figure out some new foods to make for him.  The only complaint I have about Whole Foods is that there isn't one closer to my home (time for a NKY store!).  I have heard complaints that WF is too expensive, and to that I say, Yes, some items were pricey, but I beleive you are getting what you pay for - good quality food.  And not everything was expensive, many of the items they sell are quite reasonably priced!
If you'd like to know more about Whole Foods and the awesome products they sell check out their website, or pop into a store and talk to someone!  They love to share the great things that are going on at their store.  And if you are hungry after you shop, there's a dining area in the store, so you can grab a bite to eat at their deli, salad bar, pizza counter, or even the bakery and then sit down and rest & eat before heading home!  After our tour we purchased some wine and snacks and lingered at the store catching up with old friends.  Grocery shopping + Ladies Night Out = Multi-tasking.

In the spirit of full disclosure I will admit that I was given lots of tasty foods to sample while on the tour, and even a few treats to take home, but I was not coerced into writing this post, nor was I even asked to write about the store.  I just get really excited about cool grocery stores and wanted to share some of my experiences from the tour.
